Chicken Portobello - Peter's favorite fall dish

1 Cup

Ingredients:
Chicken Cutlets 5oz
Medium Portobello Mushrooms
Red Fire Roasted Pepper
Fresh Mozzarella Cheese
Pesto Sauce
Balsamic Vinegar
Rice Pilaf
Vegetable Medley

   

Instructions:

  1. Rub Chicken Breast With Pesto
  2. Grill Chicken With Potobello and Red Pepper
  3. Layer Chicken Portobello and Red Pepper, Top With Fresh Mozzarella
  4.  Melt Cheese and Place At 6 O’clock on Plate
  5. Place Rice at 3 O’clock and Vegetable at Nine O’clock
  6. Place Aged Balsamic On Bottom of Plate
  7. Make Sure Chicken Portobello Has Rested Before Plating or water from Mushroom Will Leak On Plate.
  8. Top With Basil Chiffonade
