The perfect side dish:

Potatoes Au Gratin

Serves 4

Ingredients:

  • 8 red bliss potatoes steamed
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 cup shredded parmesan
  • salt and pepper

Procedure:

  1. Pre-heat oven to 400 degrees
  2. Slice red potatoes 1/3” keeping potato together
  3. Melt 3 tbsp butter in pan over moderate heat
  4. Add flour and cook low for 2 minutes
  5. Add milk and cook until thickened stirring constantly
  6. Add 1/2 cup shredded cheese to sauce and combine
  7. Season to taste
  8. Line potatoes in cast iron skillet or small casserole
  9. Pour sauce over potatoes top with remaining cheese
  10. Bake at 400 for 15 minutes until fully cooked and combined
