Recipe of the month:

BBQ Beef Brisket and Marinade











Makes 20 8 oz. servings.

Ingredients:

  • 2 1/2 fl. oz. bbq brisket rub (use last months recipe)
  • 1 7/8 pt. beer
  • 1 1/4 pt. jumbo spanish onions
  • 1 1/4 cup cider vinegar
  • 2 1/8 lb. chipotle pepper
  • 10 lb. fresh beef brisket

Procedure:

  1. Night before - place 20% of spice with the remaining ingredients and finely chop
  2. Cover brisket and marinade overnight
  3. Drain marinade and pat it down
  4. Pat 3/4 remaining rub and place in smoker at 220 degrees for 3 1/2 hours
  5. Sprinkle with remaining rub and cover with foil
  6. Cook for 3 more hours minimum or until tender
  7. Serve
