Un Oeuf it's Un Oeuf (An egg is an egg)

Ingredients:
1/3 cup olive oil plus 1 tablespoon
1 chopped onion
2 crushed garlic cloves
1 zucchini, chopped
1 yellow squash, chopped
1 Japanese eggplant, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 sprig of fresh thyme
1/2 cup chopped tomato
4 fresh eggs

For the Pesto:
2 cups chiffonade basil leaves (chiffonade: basil leaves rolled and minced)
1/2 cup pignoli nuts
1/2 cup grated parmesan cheese
2 crushed garlic cloves
1/2 cup olive oil
salt and pepper to taste

Method: In a large hot saute pan add 1/3 cup of the olive oil, the chopped onion, and crushed garlic. Stir well until the onion turns light brown. Add the zucchini, yellow squash, eggplant, green and red peppers, thyme, and season. Cook for 20 minutes over medium heat, stirring from time to time. Add the tomato, cook the ratatouille until it is dry, approximately another 20 minutes, and reserve it, keeping it warm.

Make the pesto by combining in a blender the basil, pignoli nuts, parmesan cheese, and crushed garlic. Incorporate the olive oil slowly and steadily, season, and reserve.

In a large cast iron skillet cook the 4 eggs in 1 tablespoon olive oil over moderately high heat until the whites are fully coagulated and the yolks are hot.

To serve: place a ring mold (3 inches diameter) in the center of a plate and fill it with the hot ratatouille. Remove the ring, place the egg on top, and garnish it with 3 small dollops of pesto. Repeat the procedure with the remaining eggs.

Add few grains of sea salt on top of each yolk and a thin wafer of toasted farmer's bread before serving. Serves 4
