Drink of the Month

Lemon Meringue Martini

Absolut Citron 2 oz.
Cointreau 1/2 oz.
Cream 1/2 oz.
Splash Fresh Lemon Juice (to taste)
Splash Simple Syrup
Chill Martini Glass

Chill Martini glass, dip rim in sugar (wet rim with fresh lemon to hold sugar). Fill shaker with ice, add all ingredients and shake well. Strain into sugar rimmed Martini glass and enjoy.

Warm Goat Cheese Salad Mirabelle

Ingredients:
1 log Montrachet goat cheese (plain not flavored)
1 teaspoon crushed black pepper
2 pounds mesclun greens
salt & pepper
1 1/2 tablespoons sherry vinegar
7 tablespoons extra virgin olive oil
1/2 French baguette
1 clove of garlic

Method: Cut the baguette on a bias into large croutons about ½ inch thick. Rub each crouton on both sides with the garlic clove. Brush the croutons on both sides with some of the olive oil. Toast the croutons until golden and crunchy and reserve.

Using a knife with the blade slightly hot cut the log of cheese into six equal pieces. Put each wheel of cheese on their flat side and sprinkle them with the crushed black pepper.
Place the cheese wheels on a sheet tray and drizzle olive oil on top of them. Put the tray under a hot boiler until the cheese gets hot and starts to melt a little.

Season the mesclun greens with salt, pepper, vinegar and the remaining olive oil. Toss the salad and divide it among 6 plates. Place the cheese on top of the reserved croutons and divide the cheese croutons among the salads. Serves 6.
