Dragon Mojito
2 oz. Bacardi Dragon Berry
12 mint leaves
splash simple syrup
1 tbsp Sugar
1/2 lime
club soda
Muddle 12 fresh mint leaves and 1/2 a lime. Cover with 2 tbsp. of simple syrup or 1 tbsp. of sugar and top with ice. Add 1 1/2 oz. of Bacardi Superior Rum and top with Club Soda. Stir well and garnish with a lime wedge and sprig of mint.

Ingredients:
1 pound picked crabmeat
2 Asian pears, shredded with skin on
1/2 cup
Maytag blue cheese crumb
1/3 cup rice vinegar
1/4 cup sesame oil
1/4 cup canola oil
1/4 cup shredded cilantro
1 tablespoon of
grated lemon rind
salt and pepper
1/2 cup Madeira
1/2 cup soy sauce
1
cup rice vinegar
1/2 cup sugar
1/2 cup
grated ginger
1 Asian pear, sliced thin
for garnish
Fresh cilantro sprigs for garnish
3-inch ring molds
Method:
In a large bowl
combine crabmeat, shredded pear, cheese, rice vinegar,
sesame oil, canola oil, cilantro, lemon rind, season the
mixture with salt and pepper to taste, and reserve it.
In a casserole combine Madeira, soy sauce, rice vinegar, sugar, and grated ginger. Bring the liquid to a boil and cook it for 5 minutes. Strain the glaze through a fine sieve and reserve it.
To serve:
Mold some of the reserved crab salad into a
3-inch ring mold and place it in the center of a serving
plate. Remove the ring, garnish the top with fresh cilantro
and the Asian pear slices, and drizzle the Madeira glaze
around the crab. Repeat with remaining crab mixture.
Serve 5 to 6. Enjoy!
