Coconut Martini
2.5 oz Bacardi Coconut
2.5 oz Malibu Rum
2.5 oz Pineapple juice
Chill Martini glass, dip rim in honey then toasted coconut. Fill shaker with ice, add all ingredients and shake well. Strain into coconut rimmed martini glass and enjoy!

Ingredients:
2 sticks (1/2 lb) unsalted butter
1 whole peeled Spanish onion, chopped in
julienne slices
2 ounces peeled fresh
gingerroot, diced
7 pears, peeled, cored, chopped
4 cinnamon
sticks
2 quarts pear juice
2 quarts water or vegetable stock
1 cup sour
cream
1 quart heavy cream
Salt and pepper
to taste
The juice of 1 lemon
Sliced pears
for garnish
Method:
In a heavy large
casserole melt the butter, add the onions and the ginger and
cook the onions over moderately high heat until they are
softened. Add the pears, the cinnamon sticks, the pear
juice, and the water, bring the liquid to a boil, and cook
the soup until the pears are tender. Remove and discard the
cinnamon sticks. Puree the soup in a blender in batches,
return it to the casserole, and stir in the sour cream and
the heavy cream. Cook the soup over low heat, stirring,
until it is heated through and add salt and pepper to taste.
Chill the soup for at least 6 hours before serving. Stir in
the juice of the lemon and garnish each serving with the
sliced pear. Serves 10.
