A La Chef Guy Reuge
Ingredients:
3 heads of fennel, quartered
1 lemon
4 garlic cloves
2 cups chicken stock
1 bouquet garnis
provencal
4 ounces unsalted butter, cut into bits
Salt and pepper to taste
Method:
Put the fennel into
an ovenproof skillet and season with salt and pepper. Cut 4
thin slices from the lemon, reserving the remaining lemon,
arrange the lemon slices over the fennel with the garlic,
the chicken stock, and the bouquet garnis, and bring the
liquid to a boil over moderately high heat. Braise the
fennel, covered, in a preheated 425 degree F. oven for 30
minutes, or until the fennel is tender.
Transfer the
fennel with a slotted spoon to a serving bowl, reserving the
cooking liquid. Reduce the reserved cooking liquid over
moderately high heat until it starts to thicken and become
syrupy. Remove the skillet form the heat and add the butter,
a little bit at a time, stirring until it is emulsified.
Squeeze the reserved lemon into the sauce, discard the
bouquet garnis, and season with salt and pepper. Pour the
sauce over the fennel. Serves 4 to 6.
