2 oz Midori
1 oz Sour Mix

Chill martini glass. Fill a cocktail shaker with ice. Add all remaining ingredients and shake well. Strain into martini glass and enjoy!

Cassoulet

Guy’s Cassoulet - Or Have Guy Cook it For You Any Friday Night in March!

Join us at Mirabelle Cassoulet Fridays $39 Three Course Dinner

Ingredients for the Base:

3 pounds white beans (Tarbais, cannellini, or Great Northern beans)
Salt to taste
1 onion, studded with 4 cloves
2 peeled carrots, each cut into 3 pieces
1 whole head of garlic, split in half
1 pound pork rind, rolled and tied with kitchen string
4 fresh or smoked ham hock

Ingredients for the Cassoulet:

2 pounds fresh pork belly, cut into 4 to 5 ounce pieces
5 pounds pork shoulder, cut into 4 to 5 ounce pieces
Salt and pepper to taste
1 cup duck fat
3 onions, sliced
6 garlic cloves
1 bouquet garni (thyme, bay leaf, parsley, leek greens)
One 14.5-ounce can of tomatoes, drained of juice
1 quart chicken stock
1 quart veal stock
1 quart of cooking bouillon from beans
12 small garlic sausages
6 duck leg confits, split in half
12 slices morteau sausage or kielbasa
Salt and pepper to taste

Ingredients for the Crust:

The reserved cooked pork rind, string removed
3 cups bread crumbs
1/2 cup mixed chopped thyme and parsley
1/4 cup chopped garlic

Method (base):

Soak the beans in cold water overnight. The next day put the beans in a large stock pot, cover them with cold water, and bring the water to a boil over high heat. Remove the pot from the stove, drain the beans, and discard the water.

Put the beans back in the pot and add fresh water to cover them. Add the salt, the onion, the carrots, the garlic, the pork rind, and the ham hock, return the water to a boil, and reduce the heat to a simmer. Simmer the beans until they are just cooked. Transfer the bean mixture to a shallow pan and let it cool. Drain the beans, reserving the bean bouillon. Remove the pork rind and reserve it.

Method (cassoulet):

Season the the fresh pork belly and shoulder with salt and pepper. In a large skillet sear the meat in ½ of the duck fat and drain the meat.

In a large stock pot add the remaining duck fat, the sliced onions, the garlic cloves, and the bouquet garni and cook the mixture until the onions are golden. Add the tomatoes, pork belly and shoulder, chicken stock, veal stock and reserved bean bouillon, season the mixture with salt and pepper, and cook it for 40 minutes, or until the meat is tender.

Cover the bottom of an ovenproof earthenware shallow with the cooked beans, add the cooked pork belly and shoulder, the sausage and the morteau, the ham hock meat without the bone, the duck confit, and cover the mixture with the tomato cooking liquid.

For the crust topping:

Cut the reserved pork rind into small pieces and in a bowl mix it with the bread crumbs, chopped parsley and thyme, and chopped garlic.

Cover the casssoulet with the crust and bake the cassoulet in a preheated 450 F. oven for 2 hours. While the cassoulet is cooking ladle the cooking liquid over the crumb crust every 15 mintues or so. The cassoulet is cooked when the liquid is almost evaporated and the top is crust-like.

Serves 10 to 12.
