You'll Need:
2 oz Kahlua
½ oz Banana Liqueur
½ oz Strawberry Liqueur
1 oz Pineapple juice
1 oz Milk
1 Maraschino Cherry
Hershey’s Chocolate Syrup
Moisten the outer rim of a martini glass & dip in chocolate syrup. Fill a cocktail shaker with ice, add the remaining ingredients and shake well. Pour contents of shaker into chocolate syrup rimmed glass & garnish with a cherry. Delicious.
Recipe of the Month
Roasted Loin of Lamb with Curry
Ingredients:
2 trimmed loins of lamb
1/3 cup curry powder
24 radishes
2 English cucumbers or regular cucumbers
1 tablespoon unsalted butter
¾ cup sour cream
1 tablespoon chopped chives
Fresh watercress for garnish
Salt and pepper to taste
Method:
Roll the loins of lamb in the curry powder, reserving 1 tablespoon of the curry powder, season them with the salt and pepper, and in a skillet sear them on every side over moderately high heat. Remove the lamb loins from the skillet and let them cool on a rack.
Trim and clean the radishes, quarter them, and blanch them in a saucepan of boiling salted water for 3 minutes. Let them cool and reserve them.
Peel the cucumbers, slice them lengthwise, and scoop out the seeds with a spoon. Cut the cucumbers into 2 inch batons.
In a skillet add the butter and melt it over moderately high heat. Add the cucumbers and sauté them for 2 minutes. Add the radishes and the sour cream and reduce the mixture, stirring occasionally, until it is thickened. Season the ragout with the reserved curry powder.
In a preheated 425 F degree oven bake the loins of lamb on a rack over a roasting pan for about 6 to 8 minutes for medium rare.
Add the chives to the cucumber-radish ragout, put the ragout in a large serving bowl, and arrange the lamb loins, sliced thinly, over the ragout. Garnish the dish with the watercress.
Serves 6 to 8 as an appetizer.
Serves 4 as a main course.
