Ingredients:
2 ½ pounds uncooked sauerkraut
2 ounces lard
1 cup onions, peeled and sliced
½ cup bacon, cut into cubes
1 bay leaf
8 juniper berries
12 black peppercorns
1 apple, peeled, cored and sliced
1 bottle dry white wine
Salt and pepper to taste
Garnish:
3 smoked or fresh ham hocks (pork knuckles)
12 ounces smoked bacon in one piece
6 frankfurters
3 smoked sausages
6 bratwurst
6 smoked pork chops
12 garlic sausage
12 peeled potatoes, cooked in boiling wate
Method:
Sauerkraut: Rinse the sauerkraut 2 or 3 times in hot water and drain it. In a large pot add the lard and let it get hot. Add the onions, apple, bacon, black pepper, juniper berries, and bay leaf. Cook the mixture over moderate heat until the onions are softened but without color. Add a thin layer of sauerkraut and salt and pepper over the onion mixture. Add another thin layer of sauerkraut and salt and pepper and place the 12-ounce piece of bacon and the ham hocks in the center. Add 2 more thin layers of sauerkraut and salt and pepper. Pour the white wine over the sauerkraut, bring it to a boil, and reduce the heat to moderate. Cook the sauerkraut, covered, for 40 minutes. Remove the piece of bacon and reserve it. Continue to cook the sauerkraut for 40 minutes more. Remove the ham hocks and reserve them.
Fill a large casserole with water, add a touch of salt, and bring the water to a boil. Reduce the heat to a simmer and add all the meat garnishes to the water in order to keep the meat hot until ready to serve. Keep the potatoes hot in the boiling water.
For Serving: Transfer the sauerkraut to a large platter, drain all the meat, and arrange it over the sauerkraut. Cut the reserved bacon into 6 pieces and place it on top with the ham hocks. Drain the potatoes and arrange them around the platter. Serve the choucroute with mustard on the side.
Serves 6
