Add a little warmth on a chilly day.
You'll Need:
½ oz. Kahlua
½ oz. crème de cacao
½ oz. Brandy
4 oz. coffee
1 ½ oz. whipped cream
Cinnamon stick
Method:
Mix all alcohol in an Irish coffee glass, add coffee, top with whipped cream, garnish with a cinnamon stick and serve.
* You can use a wine glass in lieu of the coffee glass just put a spoon in the wine glass BEFORE adding the hot coffee, to avoid cracking the glass.
Recipe of the Month
Stuffed Mushroom Hors d’Oeuvres
Ingredients:
2 pounds large domestic white mushrooms
The juice of 1 lemon
½ cup chopped parsley
½ cup chopped chives
1 teaspoon chopped garlic
¼ cup olive oil
12 ounces white bread, crust removed and crumbled
Salt and pepper to taste
Method:
Clean the mushrooms well in cold running water. Separate the stems from the caps of the mushrooms and chop the stems. In a bowl combine the chopped stems with the lemon juice, the parsley, the chives, and the garlic and season with salt and pepper. In a large frying pan sauté the mushroom caps in about 1 tablespoon of the olive oil over moderately high heat until they are softened. In another frying pan sauté the mushroom stem mixture in about 1 tablespoon of the olive oil over moderate heat until the mushrooms are cooked. Let the mushroom stem mixture cool.
Brush a large baking pan with oil and arrange the mushroom caps on the pan hollow side up. In a bowl combine the cooled mushroom stem mixture with 1 tablespoon of the olive oil and add the bread, and salt and pepper to taste. Combine the mixture well. Fill the mushroom caps with the mixture and bake the mushrooms in a preheated 425 degree oven for 15 minutes. Serves 8 as hors d’oeuvres.
