In Celebration of Cinco de Mayo, Sip This Tasty Margarita!
You'll Need:
2 ounces tequila
1 ounce Chambord raspberry liquor
1 ounce simple syrup (made with 1 part sugar, 1 part water)
1/2 ounce fresh lemon juice
1/2 ounce fresh lime juice
Lime for garnish
Method:
Add the tequila, Chambord, simple syrup, lemon juice, and lime juice to a cocktail shaker filled with ice.
Shake vigorously; pour into a chilled margarita glass, garnish with a lime
If serving frozen, combine liquid ingredients in a blender with ¾ cup ice; blend until smooth; pour into a chilled margarita
Glass and garnish w/ a lime.
Recipe of the Month
Vanilla Yogurt Mousse
Ingredients:
3 ½ cups plain yogurt
1 vanilla bean (scraped)
½ cup sugar
6 leaves gelatin
½ cup whipped cream
Method:
Heat a cup of yogurt with vanilla bean scrapings and sugar.
Bloomed gelatin, and whisk into the mixture.
Place the remaining yogurt in a bowl, combine with the yogurt-gelatin mixture, and gently fold in the whipped cream.
Transfer the mousse into large goblet glasses, and refrigerate for two hours.
Rhubarb Gel
Ingredients:
2 cups trimmed and sliced rhubarb
½ cup sugar
1 quart water
6 grains black peppercorn
14 sheets gelatin
Method:
In a small pot add rhubarb, sugar, water, and black peppercorn, Cook the mixture over slow heat for about 30 minutes, and gently put through a strainer, reserving the liquid.
Bloomed the gelatin, and whisk it into the rhubarb liquid. Cool down the liquid, and slowly pour it on top of the Yogurt mousse to form a coating 1inch thick. Refrigerate until the gel is set, and serve the mousse with sesame scented lace cookie.
