Drink of the Month

"New You" Pomegranate Champagne Cocktail

You'll Need:

7 oz champagne
1 oz Pama pomegranate liqueur
2 oz orange juice

Method:

Combine all in glass and mix. Garnish with fruit as desired and start your new year off right!

 

 

Recipe of the Month

Pearl Barley Risotto with Shiitake Mushrooms and Herbs

You'll Need:

30 to 40 small shiitake mushroom caps
9 ounces unsalted butter
1 cup chopped onion
1 teaspoon chopped garlic
1 cup diced pancetta bacon
½ pound barley
1 quart chicken or vegetable stock
½ cup chopped parsley
½ cup chopped chives
½ cup chopped chervil
Parmesan Cheese
Extra virgin olive oil
Salt and pepper

Method:

In a skillet sauté the mushroom caps in 3 ounces of the butter, season them with salt and pepper, and reserve them.

Heat a large saucepan, add 3 ounces of the butter, and melt it. Add the onions, the garlic, and the pancetta and cook the mixture over medium heat, stirring with a wooden spoon, until it starts to turn golden. Add the barley and stir the mixture well.

Add 2 cups of the stock, bring it to a boil, and simmer the mixture, stirring constantly, until the liquid is incorporated. Continue adding the stock, a little at a time, stirring until the liquid is incorporated, for about 20 minutes. Gradually the barley will cook releasing its starch. Taste the barley to test if it is cooked. If the barley is cooked add the remaining butter, the reserved mushrooms, and the parsley, the chives, and the chervil.

Rectify the seasoning and divide the risotto among 4 to 6 bowls. Grate the Parmesan cheese over the risotto, drizzle the olive oil over it, and serve it hot.

Serves 4 to 6.
