Drink of the Month

Red Hot

You'll Need:

4 oz. Finlandia Lime Vodka*
Splash of triple sec
1 oz. of Chambord Liqueur
Splash of sour mix
Raspberry sugar**
Lemon wedge

* Any lemon or lime vodka may be substituted
** Raspberry sugar can be purchased at Home Goods and other specialty stores or on-line at Roxi-spice.

Method:

Chill a martini glass. Fill a shaker with ice add vodka, chambord, triple sec, & sour mix and shake. Take a lemon wedge and wipe the rim of martini glass w/ the lemon making it sticky, then dip the rim in raspberry sugar. Pour contents of shaker into martini glass and sip. Sweet.

Recipe of the Month

Chocolate Mousse Cake Mirabelle

You'll Need:

7oz Manjari Valrhona chocolate, or other high quality semi-sweet chocolate
7oz unsalted butter
½ cup sugar
5 egg yolks
¼ cup Grand Marnier liqueur
5 egg whites
8-inch round baking pan, buttered and dusted with cocoa powder
cocoa powder for garnish

Method:

Combine the chocolate and the butter in a large bowl set over a double boiler and let the chocolate melt.

In another large bowl combine ¾ of the sugar with the egg yolks and beat the mixture with an electric beater until a ribbon is formed when the beater is lifted.

Add the remaining sugar and the Grand Marnier to the chocolate mixture and combine it well.

In the bowl of an electric mixer beat the egg whites until they form soft peaks.

Fold the chocolate mixture into the egg yolk mixture and then gently fold in the beaten egg whites. Transfer the cake mixture to the prepared baking pan. Fill a deep-sided baking pan1/2 full with water in order to create a bain-marie, carefully transfer the cake pan with the mousse cake to the bain-marie (the water should reach about 2/3 the way up the baking pan), and bake the cake in a preheated 230 F. degree oven for 40 minutes. After the mousse cake is baked, let it cool, and transfer it to the refrigerator. Let the cake chill for about 12 hours before unmolding it.

To unmold the cake warm the pan slightly in hot water or over medium heat for a few seconds. Put a large plate over the cake and turn the cake upside down onto the plate. Sprinkle the cake with cocoa powder for garnish.
