It's Fiesta Time!

You'll Need:

4 oz. El Jimador Tequila
Splash Triple Sec
Fresh Lime Juice - Squeeze 2 Lime Wedges
1 oz. Chambord
Raspberry Sugar

Method:

Fill a shaker with ice. Add Tequila, Chambord, splash of Triple Sec and fresh lime juice. Shake, shake, shake!

Using a lime wedge, wipe the rim of a margarita glass with lime then dip in raspberry sugar. Pour contents of shaker into rimmed margarita glass and Enjoy! FELIZ DIAS!

Recipe of the Month

Chocolate Soufflé Mirabelle

Ingredients for the Soufflés:

6 ounces extra bitter chocolate (64% to 72%), melted
1/2 cup and 1 tablespoon hot milk
2 egg yolks
1/8 cup cocoa powder
6 egg whites
1/4 cup sugar
5 individual ovenproof ramekins (4” across by 2 ¼” deep), buttered and sugared

Ingredients for the Chocolate Sauce:

1/2 cup sugar 1 cup corn syrup
1 cup plus 2 tablespoons water
1 1/2 tablespoons brewed espresso coffee
15 ounces chocolate, melted
1/4 cup brandy


Method:

Soufflés: Transfer the melted chocolate to a large bowl, add the hot milk, egg yolks, and cocoa powder, and stir the mixture well. Keep the mixture warm.

Using a kitchen mixer fitted with the beater whip the egg whites to a soft peak and slowly pour in the sugar while still beating. Continue to beat the egg whites for 1 minute, or until they form slightly stiff peaks when the beater is lifted.

Add about half a cup of whites to the chocolate mixture and combine it. Fold the egg white/chocolate mixture into the remaining whites and combine the mixture gently but quickly until it is blended.

Divide the mixture among the prepared ramekins and flatten the top with a small spatula.

Fill a shallow baking dish halfway with hot water. Put the ramekins in the baking dish and bake the soufflés in a preheated 325⁰ F. for 15 minutes.

Chocolate Sauce: In a heavy saucepan combine the sugar, corn syrup, water, and coffee and heat the mixture for 3 minutes or until it simmers. Add the melted chocolate, stir in the brandy, and keep the mixture hot but not boiling.

Remove the soufflés from the water bath, transfer each soufflé to a small plate, and sprinkle it with powdered sugar. With a spoon open a hole in each soufflé and pour in about a tablespoon of the hot chocolate sauce.
