Drink of the Month

Atlantique Fishbowl

You'll Need:

3 oz Malibu Melon Rum
1 oz Melon Liqueur
1/2 oz Blue Curacao
2 oz Pineapple Juice
Splash of sour mix
Splash of club soda
Plastic fish bowl

Method:

Fill a plastic fish bowl with ice add all ingredients, garnish with a pineapple wedge.

Watch out for HIGH TIDE!

Guy's Recipe of the Month

My Steak Tartare

Ingredients:

2 pounds high quality lean beef (tails or fillet or top round), chopped by hand or processed in a meat grinder fitted with a large die
2 tablespoons Dijon mustard
3 egg yolks
Salt and pepper
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
3/4 cup olive oil
2 tablespoons thinly chopped cornichons or gherkins
1 tablespoon chopped shallot
2 tablespoons chopped capers
2 tablespoons chopped parsley
Tabasco sauce


Method:

In a large bowl combine the mustard, egg yolks, seasoning, ketchup, and Worcestershire sauce and slowly whisk in the olive oil to form a thick mayonnaise.

Add the cornichons, shallot, capers, parsley, and Tabasco sauce to taste.

Combine the meat with the sauce, taste it, and rectify the seasoning. The steak tartare should have a pleasant kick to it.

Mold the tartare using a circular ring mold making each portion about 4 ounces in weight. With the back of a knife make a criss-cross marking over the meat. Serve the Steak Tartare with a small salad of mâche and frisée lettuce salad and homemade potato chips.
