Drink of the Month

Rum Swizzle

You'll Need:

3 oz Bacardi Rum
1 oz Myer's Dark Rum
1 oz Orange Juice
1 oz Pineapple Juice
2 Fresh Squeezed Lime Wedges
Splash of Grenadine

Method:

Fill a shaker with rums, juice, a splash of grenadine and fresh lime juice then shake. Pour into a tall glass and swizzle in.

Guy's Recipe of the Month

Chef Guy’s Summer Gazpacho

My love for the Andalusian region of Spain inspired this refreshing recipe perfect for the hot summer days.

Ingredients:

4 slices white bread (Pepperidge Farm preferable), crust removed and cubed (there should be about 1 cup bread)
½ cup cold water
4 pounds ripened tomatoes, diced
2 crushed garlic cloves
½ Vidalia onion, peeled and diced
1 bell pepper, seeded and diced
1 red bell pepper, seeded and diced
2 cucumbers, peeled, seeded, and diced
2 tablespoons sherry vinegar
½ teaspoon ground cumin
1 pinch cayenne pepper
Salt and pepper
1 cup extra virgin olive oil


Method:

In a bowl combine the white bread with the water and let it soak for about 5 minutes.

Using a large blender (Vita-Mix works well) add the soaked bread, tomatoes, garlic, onion, red and green bell peppers, cucumbers, and sherry vinegar and puree the mixture.

Add the cumin, cayenne pepper, and salt and pepper, blend the mixture for about 30 seconds, and slowly incorporate the olive oil through the opening on top of the machine. Pass the soup through a fine china cap (a fine sieve), rectify the seasoning, and refrigerate the gazpacho, covered, until it is cold.


GARNISHES
Ingredients:

⅓ cup chopped hard-boiled eggs
⅓ cup diced cucumbers
⅓ cup diced red bell pepper
¼ cup chopped cilantro
1 12-ounce log of sushi-quality central cut tuna (raw)
Extra virgin olive oil
Sea salt


Method:

In a small bowl combine the hard-boiled egg, cucumber, red bell pepper, and cilantro.

Slice the log of tuna into thin slices of equal portion, about 24 slices.


TO SERVE

Divide the gazpacho among 8 chilled soup bowls. Put a small spoonful of the garnish on top of each soup and place 3 slices of tuna on top of the garnish on each bowl. Drizzle a touch of olive oil over the tuna and sprinkle 2 or 3 grains of salt before serving.
