Safe Harbor

Hopefully NOT available at any of our restaurants this hurricane season.

You'll Need:

3 oz Vodka
4 oz Lemonade
Splash of Blue Curacao
Sugar
Lemon Wedge

Method:

Fill a shaker with ice, add vodka, Blue Curacao and lemonade. Find yourself a HURRICANE glass. Wipe the lemon wedge around the rim of the glass, then dip in sugar. Pour contents of shaker into glass and sip calmly!

 

 

Guy's Recipe of the Month

Goujonettes of Sole with Meyer Lemon Aϊoli

GOUJONETTES

Ingredients:

2 cups flour
2 eggs
1 tablespoon olive oil
1 ½ quarts Panko bread crumbs
salt and pepper
6 fillets of flounder, center line removed and each half cut into long narrow strips


Method:

Put the flour in a bowl. In another bowl beat the eggs with the olive oil and a touch of salt and pepper. In a blender process the panko crumbs until they are a powder and transfer the powder to a bowl.

Arrange the bowl of flour, the bowl of eggs, and the bowl of panko powder in a line. Dip the strips (6 or 7 at a time) of flounder first in the flour and pat them dry. Dip the strips in the egg wash and then roll them in the Panko powder.

Arrange the goujonettes on a tray and refrigerate them for at least 30 minutes.


MEYER LEMON AΪOLI

Ingredients:

1 egg yolk
½ tablespoon Dijon mustard
salt and pepper
⅓ cup Meyer lemon juice
1 ½ cups canola oil
1 cup olive oil
¼ cup water
parsley for garnish


Method:

In a food processor combine the egg yolk, the mustard, the salt and pepper, and the Meyer lemon juice and spin the machine. In a large measuring cup with a spout combine the olive and canola oils and slowly pour the oil into the spinning mixture through the opening on top of the machine. The mixture will become mayonnaise-like and rather solid. Drizzle in a little of the water for a creamier texture. Note that you might not need the entire amount of water. Transfer the aïoli to a bowl.

Deep-fry the goujonettes of sole in a fryer set at 375°F until they are crisp and golden. Transfer the sole with a slotted spoon to paper towels to drain and sprinkle them with salt.

Transfer the goujonettes to a serving platter, garnish them with the parsley, and serve them with the aïoli on the side.

This dish can be served as an appetizer or for cocktail food.
