Drink of the Month

Bon Bon

Better Than Dessert!

You'll Need:

1 oz Godiva Chocolate Liqueur
3 oz Finlandia Vodka (or any Vodka)
½ oz Creme de Cacao (white or dark)
Hershey's Chocolate Syrup

Method:

Fill a cocktail shaker with ice and add Godiva, Vodka and Creme de Cacao and shake. Chill a martini glass. Drizzle chocolate syrup into martini glass in a swirl motion. Pour contents of shaker into martini glass. Enjoy!

Guy's Recipe of the Month

Kelly’s Dark Chocolate Grand Marnier Truffles

The time for chocolate is Valentine’s Day and homemade chocolate truffles are a special treat, especially with a dash of Grand Marnier. This recipe is from the files of my pastry chef. Enjoy!

Ingredients for the Ganache:

16 ounces dark chocolate couverture, chopped
2 ounces unsalted butter
1 cup heavy cream
2 tablespoons Grand Marnier


Ingredients for the Coating:

16 ounces dark chocolate couverture, melted
Cocoa powder as needed


Method for the Ganache:

Place the chocolate and the butter into a heat-proof bowl. In a saucepan heat the cream over moderate heat until it is simmering, pour it over the chocolate mixture, and let it stand for 2 minutes. Add the Grand Marnier and stir the mixture until it is smooth.

Let the mixture cool until it starts to thicken and transfer the ganache to a pastry bag with a half-inch tip. Pipe the ganache into small mounds, about 2 teaspoons each, onto a sheet pan lined with parchment paper and chill the chocolate mounds until they are firm.

Roll the chocolate mounds between the palms of the hands to form round balls and chill them for at least 20 minutes.


Method for the Coating:

Drop the truffle balls into the melted chocolate, a few at a time, and remove them, one at a time with a fork, tapping off the excess chocolate. Drop the balls into a bowl containing the cocoa powder, coating all sides, and transfer the truffles to a sheet pan lined with parchment paper. Repeat this procedure with the remaining chocolate mounds.

Shake off the excess cocoa powder and transfer the truffles to an airtight container. Store the truffles in a cool place.

Makes about 3 dozen
