You'll Need:

2 oz. Jameson Black Barrel
1 oz. Bailey's
¾ oz. Kahlua
¾ oz. Chambord
Chocolate

Method:

Fill a cocktail shaker with Jameson Black Barrel, Bailey's, Kahlua and Chambord. Shake well and pour into a martini glass. Shave sea-salted chocolate on top of the cocktail. Enjoy!

Guy's Recipe of the Month

Kelly’s Irish Bread Pudding with Jameson Black Barrel Whiskey Ice Cream and Caramel Sauce

"This recipe is from the files of my pastry chef Kelly Donlon. You can enjoy this St. Patrick's Day at Mirabelle Tavern." - Guy Reuge

Ingredients for the Bread Pudding:

1 quart milk
8 ounces sugar
¼ cup caraway seeds
1 tablespoon vanilla extract
7 eggs
1 large loaf Irish soda bread, cut into ½ inch cubes

Method for the Bread Pudding:

In a saucepan heat the milk with the sugar, the caraway seeds, and the vanilla extract over moderate heat until it starts to simmer. Remove the pan from the heat and let it stand for 15 minutes.

Place the eggs in a bowl large enough to hold the cubed soda bread. Strain the milk mixture over the eggs and whisk the mixture well. Add the bread and let it soak until almost all the custard has been absorbed.

Grease a 9 X 9-inch ovenproof dish with non-stick spray and transfer the bread and custard mixture to the dish. Spray a sheet of foil large enough to fit over the dish with non-stick spray and cover the dish with the foil greased side down. Bake the pudding in a preheated 325 F oven for about 30 minutes, or until the custard is set. Remove the foil and bake the pudding for a few minutes more, or until it is browned slightly. Remove the bread pudding from the oven and let it cool.

Ingredients for the Whiskey Ice Cream:

13 egg yolks
1 cup sugar
1 quart half and half
½ cup Jameson Black Barrel whiskey

Method for the Whiskey Ice Cream:

In a large bowl whisk together the yolks and the sugar. In a large saucepan heat the Half and Half until it is hot and whisk it into the yolk mixture. Arrange the bowl with the custard over an ice bath and refrigerate it overnight.

Strain the custard into a large bowl and stir in the whiskey. Freeze the custard in an ice cream machine according to the manufacturer’s instructions. Store the ice cream in the freezer until needed.

Ingredients for the Whiskey Caramel Sauce:

2 cups sugar
1 pint heavy cream
¼ cup Jameson Black Barrel whiskey

Method for the Whiskey Caramel Sauce:

Put the sugar into a heavy medium saucepan and add enough water to make the sugar look like wet sand. Cook the sugar over medium heat until it starts to caramelize and is deep amber in color. Do not stir the sugar while it is cooking.

Remove the sugar from the heat, VERY GENTLY add 1 cup of the cream, and gently whisk the mixture. Gently stir in the remaining 1 cup cream and the whiskey. Pour the whiskey caramel sauce into a heatproof container.

To Serve:

Heat the bread pudding in a preheated 325°F oven until it is warm and divide it into the desired portions. Serve each portion of bread pudding with a scoop of the whiskey ice cream on top and drizzled with the caramel whiskey sauce.
