Caramelized sea scallops, cauliflower steak, caper-raisin emulsion, fine herbes

Pan-roasted branzino, black rice, salsify trio, red bell pepper coulis

Kabocha squash-pistachio agnolotti, sage brown butter, shaved Parmesan cheese

14 oz. New York strip steak (aged 28 days)*, wilted spinach, roasted fingerling potatoes, Amagansett sea salt (supp. 18)

Herb crusted rack of lamb*, truffle potato gratin, baby bok choy, natural jus

Organic chicken breast, leek and asparagus fricassée, white wine, cream sauce
