Salmon Tartare

Ingredients:

4-5 oz fresh Atlantic salmon, small dice
1 tsp pickled shallots
1 tsp chives
1/2 lemon juiced
1 Tbsp EVOO
1 tsp crème fraîche
Salt & white pepper to taste

Directions:

Clean and dice a 4-5oz piece of salmon and place in a bowl. Dice pickled shallots and chives. Juice half a lemon, remove any pits. Place all ingredients into a bowl along with extra virgin olive oil, and salt and pepper to taste. Mix together with a spoon. Begin to plate by using a ring mold. Place salmon mixture in the ring mold, garnish with crème fraiche.
